There are three types of recipes that I refuse to measure for on a regular basis: salads, hummus/ bean/ guacamole dips, pasta salads, and really anything Mexican. (Although this tequila-laced guacamole is SO worth measuring for). Dressings can be made to taste but unlike those items in the list above, I always measure. Too much skin the game, go figure. We’ve made (and loved) this Pad Thai peanut salad dressing more times than I can count in the past 3 months, so I knew it was time to share. This particular dressing is really great over shrimp + Asian-themed greens, and I keep meaning to try the leftovers in a stir fry. If anyone is so inclined, please let me know how it goes! As you can tell by the photo, my latest lunch kick is make-ahead mason jar salad. Just put two tablespoons of dressing in the bottom and layer your ingredients ending with the greens. Make sure to pack the mason jar tightly, so the dressing doesn’t leak up in transit. I’ve found that these easily keep for about 3-4 days in the fridge (more if you use heartier vegetables like kale and cabbage), so they are perfect for making over the weekend for a busy week.
Why all the lunch packing you ask? While it is exponentially easier to carry a credit card in your white coat than to run for your packed lunch while praying not to lose your OB resident, I have been making a conscious effort to bring my lunch to work because I just feel so much healthier and energized post-call. It makes such a big difference for me that I will gladly take the extra step.
In other news, while it may be too early to tell, I am seriously loving my OB/GYN rotation— Guys, I think I may have found my people! If you think about it, “go find your people” is pretty funny advice for picking a medical specialty, but it’s so true. It makes such a difference when you work with a group of people that all think like you (to a certain extent of course). While I loved GYN surgery and can’t wait to head to general surgery, it is safe to say I’m hooked on the OB side of things right now. It’s like in the beginning of a relationship where you’ll stay up all night together without batting an eye. You’re exhausted the next day, but you had such a great time that you don’t even care! I am sure my mind will change 47 more times before I graduate, but for now I’m seriously smitten.
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon creamy peanut butter
- Juice of ½ a lime
- ½ teaspoon freshly grated ginger
- ¼ teaspoon sriracha
- 1 tablespoon water (if needed)
- Combine all of the above ingredients in a canning jar. Close the jar and shake vigorously until a smooth dressing has formed (alternatively whisk the ingredients together in a small bowl). If the dressing is too thick, add up to 1 tablespoon of water to thin it slightly.
